The Kitchin is a fine dining restaurant situated in the heart of Leith.

The address is 78 Commercial Street, EH6 6LX.

The restaurant promotes modern British cuisine with the influence of French cooking. They tend to use the best quality local ingredients available, delivered daily to their trustful supplies.

The Kitchin is owned by Tom Kitchin and his wife Michaela Kitchin, and they collaborate with the Restaurant Manager Steven Spear and Head Chef Lachlan Archibald

The Kitchin's chef is Tom Kitchin, the youngest Michelin Starred Chef-Proprietor, achieving the award at just 29 years old.

He has become very popular in Scotland, with his restaurants, appearance on BBC's Saturday Kitchen, The Great British Menu and more.

 

In 2015 it became Scotland's only restaurant to hold 5 AA Rosettes, which the restaurant has held onto every year since. 

The AA Rosette award has started in 1956, where the first restaurant was awarded, and since than it is the first nationwide scheme for assessing the quality of food served by restaurants and hotels. The Rosette is an extraordinary award to be considered an achievement for all businesses: it is based on a series of inspections, and it is based on a meal visit by one or more inspectors. 

To apply for the AA Restaurant Scheme, the restaurant needs t o have menus of an a la carte, TDH, or tasting format, and a consistency of cooking across the lunch and dinner menus; it must be open to general public; it must have a food hygiene rating of 4 or 5; a payment needs to be made in order to have the inspection to take place. 

The inspection is done during lunch service mostly, where the inspectors will choose a series of dishes including starters, mains and desserts for the menus offered. If the starter or main do not meet a "Rosette" level, the dessert will not be taken. After the meal, the inspectors will pay and ask for a business card, and they will send feedbacks after their visit.
